Red Carnation Hotels grew from the Tollman family's first acquisition in 1984 into a collection of 15 current hotels across the United Kingdom, Ireland, Guernsey, Switzerland, and South Africa. The portfolio ranges from tiny London townhouses and a 30-room Edinburgh address to Ashford Castle, a Cederberg wilderness reserve, and grand coastal hotels in Cape Town and Umhlanga. Beatrice Tollman's recipes, layered fabrics, antiques, florals, and staff-led service create a recognisable family character without forcing the buildings into one design template. The current consumer directory is the authority for the hotel count. It no longer lists Xigera, while The Acorn Inn appears in group recruitment material but not the live consumer collection and is excluded here. Red Carnation does not operate a public points currency or elite ladder, although some individual hotels participate in third-party luxury programmes.
