Arva is Aman Tokyo's principal restaurant and the venue that carries most of the hotel's fine-dining reputation, built around the cooking of chef Masakazu Hiraki, who trained in Venice before returning to Japan. The kitchen works in southern Italian technique — bold, produce-forward flavors rather than the more delicate northern Italian register most Tokyo hotel Italian restaurants default to — using a mix of imported Italian staples and Japanese seasonal ingredients where the two traditions overlap well, particularly seafood and vegetables. The room itself sits at the edge of the hotel's atrium, warm-toned and wood-lined in contrast to the more minimalist stone-and-washi language elsewhere in the hotel, with both counter seating facing an open pass and conventional table seating for larger groups. Lunch runs 11:30am–3:30pm and dinner from 5:30pm, with a set course menu available until 8pm and à la carte until 9pm. It has become, since opening, one of the more written-about hotel Italian restaurants in Tokyo specifically for treating the cuisine with the same seriousness the hotel applies to its Japanese dining program.
