Arva is Aman Tokyo's principal restaurant and the venue that carries most of the hotel's fine-dining reputation, built around the cooking of chef Masakazu Hiraki, who trained in Venice before returning to Japan. The kitchen works in southern Italian technique — bold, produce-forward flavors rather than the more delicate northern Italian register most Tokyo hotel Italian restaurants default to — using a mix of imported Italian staples and Japanese seasonal ingredients where the two traditions overlap well, particularly seafood and vegetables.
