Rosewood Hong Kong's New Bar Brings a Different Negroni to Your Table
Rosewood Hong Kong opens Bar Camillo on November 25 with the Bar Leone team, a tableside Negroni trolley and reservations expected from November 1.
Rosewood Hong Kong will open Bar Camillo on November 25, 2026, bringing Bar Leone co-founders Lorenzo Antinori and Justin Shun Wah into the hotel. Reports published on October 21 and 22 describe an Italian drawing-room concept whose signature encounter happens beside your seat: a trolley where bartenders assemble a Negroni around your preferences.
For guests planning a late-November stay, this is a new evening destination to put on the itinerary before arrival. The practical detail is the booking window. Little Steps reports that reservations are due to open on November 1, citing the bar's Instagram account.
What makes the trolley worth seeking out?
Rather than simply ordering a house Negroni, guests receive a card to specify the base spirit, garnish and flavour direction. The drink is then prepared at the table. FoodieS describes a seasonal programme that also includes lighter aperitifs, reinterpretations of classics and more playful cocktails, with menus changing four times a year.
That format gives anyone who finds the usual bittersweet combination too rigid a useful starting point for a conversation. Tell the bartender what you enjoy before choosing your variations. Customisation should make the order easier to navigate, especially when people at the same table want quite different drinks.
What sort of evening is the hotel planning?
The room takes its cue from the Italian salotto, with a terrace extending the social space outdoors. Foodie's opening report describes low seating, intimate corners, wood finishes and a palette of green, gold and cream. The intended mood is a hosted gathering rather than a quick drink on the way through a lobby.
The reported capacity is 50 seats across the indoor and outdoor areas. For a group celebrating a birthday or anniversary, ask how many people can sit together and whether a terrace request can be accommodated before building dinner arrangements around it.
What should visitors confirm before booking?
Published opening hours start at 5 pm Tuesday through Sunday, with Monday closed. Friday and Saturday are scheduled to run until 1 am, with midnight closing on other operating days. Confirm those hours when reservations launch, along with prices, deposit terms and any minimum spend. A room reservation should not be treated as a bar reservation.
