Amangiri runs a single restaurant, deliberately, and The Dining Room's menu is built almost entirely around Southwestern ingredients — regional beef and game, Hatch chiles in season, blue corn, foraged desert herbs — cooked simply enough that the produce carries the meal rather than technique. The room itself is glass on three sides, facing directly onto the sandstone formations the resort is built into, so the view does a lot of the same work the menu does: neither is trying to distract from where you actually are. Because there's only one restaurant, the kitchen can hold a smaller, tighter menu than a resort running three or four venues, and it changes with genuine seasonality rather than a fixed rotation.
