Oro is Cipriani's fine-dining flagship and one of the few Venice hotel restaurants that locals and visiting cooks treat as a destination independent of the room key. Head chef Vania Ghedini — appointed 2024 after years with the Alajmo brothers at Sesamo in Marrakesh — cooks under the culinary creative direction of Massimo Bottura. The room itself was rebuilt by Peter Marino as an homage to gold: gilded porcelain, quieter lighting, and a direct lagoon outlook. The cooking roots itself in lagoon and Veneto produce (cuttlefish, blue crab, salicornia, Adriatic sturgeon) then layers Ghedini's Emilia-Romagna training and Maghrebi notes from her Marrakesh years — cardamom, verbena, sesame — without turning Venetian food into fusion theatre. Dinner centres on a seven-course tasting menu (recently around €260, wine pairings extra); lunch runs a lighter ORO Luce à la carte built for sharing.
