The Clayfield Opens in Niagara Wine Country Under Unbound Collection

Hyatt's Unbound Collection debuts The Clayfield in Niagara-on-the-Lake with 102 rooms, Terrain restaurant, a clay spa, and harvest-season timing.

The Clayfield has opened in Niagara-on-the-Lake as a 102-room boutique hotel in The Unbound Collection by Hyatt, giving Canadian wine country a new upscale base at the start of harvest season. The property sits at 18 Clayfield Commons, between the vineyards and Old Town, within the broader Buffalo & Niagara corridor that draws cross-border travelers as well as Toronto weekenders.

Two local families, one Unbound hotel

Hyatt's announcement frames the project as a partnership between David Feldberg, founder of Stratus Vineyards, and John Hawley of Village Developments, whose Clayfield Commons neighborhood supplies shops, restaurants, and a landscaped green around the hotel. Montreal-based Sid Lee Architecture shaped the building with escarpment curves, vertical timber recalling vineyard rows, oak, stone, and floor-to-ceiling glass rather than traditional wine-country pastiche.

Unbound sits in Hyatt's luxury portfolio alongside brands such as Park Hyatt, which matters for World of Hyatt elite travelers who want independent character without leaving the points ecosystem. Recent Unbound additions elsewhere include The Georgian in Santa Monica and Hotel 1000 in Seattle, with Digby in Savannah and Casa Duhau in Mendoza slated for 2027.

Terrain, The Rooftop, and a clay-led spa

Dining is led by Terrain from The Ascari Group, with Executive Chef Joel LaBute cooking produce-driven Niagara menus after time at Scaramouche, Langdon Hall, Araxi, and Quails' Gate. The restaurant has an 80-seat dining room, a 25-seat lobby bar, and a Chef's Table, with a wine list that privileges Niagara producers. Upstairs, The Rooftop is pitched as Niagara-on-the-Lake's first rooftop patio for cocktails and small plates over the vines.

  • Spa program built around mineral-rich Niagara clay and vinotherapy treatments
  • Selected rooms with vineyard views and in-room wine-tasting stations
  • More than 5,400 square feet of meetings space, including a 2,750-square-foot Vintner's Hall
  • Opening offers promoted for stays through April 2027

Why this opening matters for guests

Niagara-on-the-Lake has long had inns and wine-country lodges; a 102-key Unbound property raises the bar for travelers who want spa, rooftop, and destination dining in one stay without driving between tasting rooms and a separate hotel. Opening as harvest colors the escarpment is not accidental. If your trip is built around Stratus, local makers at Clayfield Commons, and a single walkable base, The Clayfield is designed for that itinerary.
