Four Seasons Puerto Rico Opens Perla, a Caviar Cart Supper Club, October 19

Four Seasons Puerto Rico opens Perla, a supper club with a Champagne and caviar cart, on October 19, with Mediterranean Ocean Terrace following in November.

Four Seasons Resort and Residences Puerto Rico, the Bahía Beach resort that took over from The St. Regis Bahia Beach Resort, will open Perla, an evening supper club with a Champagne, martini and caviar cart, on October 19, 2026. A second restaurant, the all-day Mediterranean Ocean Terrace, follows in early November.

Both concepts come from Executive Chef Victor Rosado. They arrive less than a year after Four Seasons made its Puerto Rico debut in Río Grande following a $40 million transformation of the former St. Regis, according to Caribbean Journal. The resort opened under the Four Seasons flag in November 2025 with 139 rooms and suites and 85 private residences.

What is Perla?

Perla means "pearl," and the resort pitches it as a hidden-gem supper club built on premium seafood and cuts, serious wine and spirits, and choreographed tableside moments. The Champagne, Martini and Caviar Cart is the signature, alongside a chef-led caviar service. Signature dishes include dressed oysters, hamachi with guanábana ponzu, Chilean sea bass and a prime New York strip, with large-format tomahawk steak and whole Dover sole for the table.

The room is described as intimate, and the resort frames the evening around sobremesa, the habit of lingering at the table long after the plates are cleared. "Dining has the power to bring people together through shared experiences," Rosado said in the announcement.

What is Ocean Terrace?

Ocean Terrace sits beside the pool and the shoreline, with views over the Atlantic, and will serve breakfast, lunch and dinner once it opens in early November. The menu runs to handcrafted pizzas, housemade pastas, fresh seafood, salads and shareable starters. Signature plates include charred octopus, shrimp insalata, mussels al limone, a margherita pizza and an Italian adobo half chicken. Recurring brunches and seasonal programming are planned.

What else changed at the resort?

The lobby bar formerly known as El Bembé has been renamed Palm Court. It keeps its Puerto Rican and Latin-inspired food and cocktails, so returning guests will find the same social hub under a new name rather than a new concept. General Manager Pablo Molinari called the two openings "an exciting milestone in the continued evolution of our resort."

Should you plan a stay around Perla?

For a late-autumn trip, the dates do the planning. Arrive after October 19 and Perla is open for dinner; arrive after early November and Ocean Terrace adds a relaxed daytime table steps from the sand. A small supper club with tableside service has limited seats, so guests set on a particular night should request the reservation when they book the room rather than waiting until check-in.
