One&Only The Palm Adds Two Yannick Alléno Restaurants in Dubai on October 19

One&Only The Palm opens L'Abysse Dubai, a 34-seat Yannick Alléno omakase, and Casea 101, an Italian coastal spot on the marina, both on October 19, 2026.

One&Only The Palm on Palm Jumeirah in Dubai is opening two new restaurants by French chef Yannick Alléno on the same day, October 19, 2026. L'Abysse Dubai is a 34-seat omakase, and Casea 101 is a waterfront Italian restaurant on the resort's marina. They join STAY by Yannick Alléno, which already holds two Michelin stars, so the One&Only resort will have three Alléno kitchens.

What is L'Abysse?

L'Abysse is Alléno's take on Japanese omakase. It began at Pavillon Ledoyen in Paris in 2018, then went to Monte-Carlo and Osaka. Dubai is its fourth location and its first in the Middle East. The cooking follows Alléno's Cuisine of Time idea, built on maturing and extracting flavor, and the person in front of you is sushi master Ken Ishihata.

The room seats 34: ten at the sushi counter, 16 in the dining room and eight in a private room. The menu runs in 13 sequences across five movements, from small bites and savory compositions through nigiri to a sweet finish the restaurant calls Amamis. Early dishes include sea urchin with ginger mayonnaise, lightly grilled langoustine and an azuki and combawa millefeuille. Wine, sake, tea and infusions are paired to follow the menu. Interiors are by Laurence Bonnel and RoWin'atelier, with art by William Coggin, Célia Bertrand, Silver Sentimenti and Rino Claessens.

"Together, our teams have created something Dubai has never seen before," Alléno said.

What is Casea 101?

Casea 101 is the relaxed one. The menu is Italian coastal cooking built on seafood, shellfish and Mediterranean produce: seafood towers, crudos, the day's catch cooked over fire, and pizzas from the open kitchen, all meant for sharing. The space has pavilion-like forms, warm wood and sun-washed stone, with a central indoor-outdoor bar, an overwater terrace and a boat arrival from the marina. It is set up for long lunches that roll into aperitivo, then a livelier mood with music after dark.

How do you get a seat?

L'Abysse serves dinner only, with seatings from 6:30 p.m. and the last at 7:30 p.m., and it is closed on Tuesdays. The dress code is casually elegant, and men need full-length trousers. Book directly with the restaurant, and ask for the counter: with only ten seats there, it is where you watch Ishihata work and it will be the first part of the room to fill. Casea 101 is open daily from 12:30 p.m., with the last dinner seating at 10:30 p.m.

Why does it matter for a stay?

With these two openings, the Yannick Alléno Group reaches 28 restaurants worldwide, and One&Only The Palm guests get three different Alléno menus without leaving the property. For a short Dubai stay, that makes the resort a stronger rival to city-side dining hotels such as The Lana and One&Only One Za'abeel. Guests arriving in the first weeks should book L'Abysse at the same time as the room.
