The restaurant is the product. Raymond Blanc opened it in 1984 inside the manor and held two Michelin stars without interruption for more than forty years — a consistency almost no British country-house kitchen has matched. The cooking is classical French technique applied to what the eleven on-site gardens and 2,500-tree orchard actually produce that week: potager vegetables treated with the same seriousness as protein, heritage varieties, foraged notes, and a zero-waste discipline that later earned a Michelin Green Star. Blanc's brigade became a finishing school — thirty-plus alumni went on to earn their own Michelin stars. Executive Head Chef Luke Selby (a Manoir alumnus who returned in 2023) led the kitchen through the 40th-anniversary reset of classic dishes before departing ahead of the 2026 closure; pastry under Benoit Blin has long been a separate reason to book. From January 2026 the restaurant is closed for redevelopment, with three-Michelin-star chef Arnaud Donckele appointed Culinary Director for the summer 2027 reopening — Blanc remaining as Founder and Lifetime Ambassador. What returns will be Donckele's reading of British terroir through French craft, on the same garden foundations.
