1891 Bar is the hotel's all-day-into-late cocktail room, named for the opening year and redesigned to pull the subtropical surroundings indoors. By day it feeds into the Tea Library — rare and local tea blends as a quieter counterpart to the terrace ritual. By night it becomes the Funchal-view cocktail perch for pre-William aperitifs and post-dinner nightcaps. Bartenders run a proper classic-and-signature list; this is not a lobby afterthought. Open roughly 10am to midnight, it is the venue you will use most often after the restaurants themselves. Use it as the hinge of the day: tea library mid-morning or late afternoon, aperitif before William, digestif after. Window seats over Funchal at night are worth asking for explicitly when the bar is busy with hotel residents and well-dressed locals. The redesign pulled subtropical garden colour into the room without losing the 1891 name's weight — it feels like a modern bar inside a historic palace, which is the correct brief.
