Creative Executive Chef José Diogo Costa, a Funchal native who returned after stages across Europe, Asia and Latin America (including acclaimed work in the Azores), builds two tasting menus (William and Discovery) around island ingredients that most mainland kitchens never see: chícharo (local lupin beans he helped put back on menus), brigalhó from the Valley of the Nuns, Seixal trout, Atlantic fish with seaweed and celeriac, passion fruit and chirimoya in savoury courses, and a dessert line that has run São Tomé chocolate with lemon and Pé de Cabra. Canapés arrive on wicker by a 77-year-old Madeiran craftsman — a small detail that signals how literally Costa takes local craft.
