Dining is essentially the hotel when you are locked inside the park after hours, and Belmond has rebuilt the programme around two restaurants and three bars rather than the older Itaipu naming. Restaurant Y (pronounced "ee," from Guarani for water) is the creative Brazilian flagship under two-Michelin-star chef Luiz Filipe Souza (stars earned at Evvai in São Paulo, not claimed for Y itself), with a nine-course tasting and à la carte built on manioc, cupuaçu, açaí and regional produce. Ipê by the pool covers breakfast through Gaucho-style barbecue dinners and Saturday feijoada.
